Yogurt Cucumber Sauce



454 grams (or 2 Cups) Plain Yogurt
I use fat free, but you can use whichever you prefer


1 Cucumber diced


1/4 Cup chopped mint



Add all of the ingredients to a bowl and stir.


Finished product!

It's very easy and very tasty. We use it on falafel and our greek chicken meal.

Greek Chicken

I'm not sure where I my husband got this recipe, but it is so good!



Take four chicken breasts and slice it very thin.


Add the following ingredients to a blender.

Juice from at least 2 Limes
2 Tablespoons Olive Oil
4 clove garlic, peeled
2 teaspoon ground coriander
2 teaspoon cumin
Salt and Pepper
1 Cup Cilantro 

Pour the marinate over the chicken. I put the chicken in a ziplock then put it in the fridge.

The marinade all blended.

Pour over chicken

Make sure the marinade covers the chicken

Let the chicken sit in the fridge for at least 30 minutes.



Cook the chicken in a pan on the stove.

My husband's version

You can have it on pita bread or flat bread. We prefer to have it on tortillas, top it with yogurt cucumber sauce and onions. My tortillas are grain free. As soon as I get pictures I'll post the recipe.

Grain Free Banana Pancakes

These are really easy to make and very good!


Start out by whisking 1 Egg


Add 1 Tablespoon of Tapioca Flour

Whisk until the lumps are gone.


Add 1/4 teaspoon Vanilla

Whisk until combined


This step is optional. I add a few dashes of cinnamon.


Take 1/2 a banana and mash it!


Combine the egg mixture and banana. Mix well. 


Pour the batter into a hot pan. 
I used non stick cooking spray so it wouldn't stick and I poured about a third of the batter in.


Viola you have pancakes!


Grain Free Banana Pancakes

1        Egg
1/2     Banana
1/4 t   Vanilla
1 T     Tapioca Flour
Dash  Cinnamon (optional)

Whisk egg in a bowl. Add the Tapioca Flour and whisk until lumps are gone. Stir in the Vanilla and Cinnamon. In a separate bowl mash the banana. Combine all ingredients into one bowl. Pour batter onto a hot pan and cook!

* I did make these the first time without the flour or cinnamon. They are good but adding the flour just helps bind the ingredients together.
